  • Chicken With White Wine (Pollo Al Vino Bianco)

    Ingredients

    • 4 lb Roasting chicken, cut up
    • 1/4 c. Flour Salt/pepper
    • 1/4 c. Butter
    • 2 Tbsp. Extra virgin olive oil
    • 1 med Onion, finely minced
    • 1 x Garlic clove, minced
    • 2 med Carrots, grated
    • 2 stalk celery, finely chop
    • 1 slc Ham, minced Juice of 1/2 lemon
    • 1/2 lb Mushroooms, sliced
    • 1 1/4 c. Dry white wine
    • 1 c. Chicken broth
    • 1/2 tsp Rosemary

    Directions

    1. Dust chicken well with flour seasoned with salt and pepper. Heat the butter and oil in a large pan. Add in chicken and fry till brown and crisp all over.
    2. Remove to a plate. Add in onion, garlic, carrots, celery, and ham to pan.
    3. Saute/fry over low heat till soft but not brown. Add in lemon juice, mushrooms, wine, chicken broth, salt, pepper, and rosemary. Bring to a high simmer.
    4. Add in browned chicken, lower heat and cover. Simmer gently for 45 min or possibly till chicken is fork tender.
