  • Chicken With Spicy Fruit Sauce

    Ingredients

    • 1 1/4 c. unsweetened pineapple juice
    • 1/4 c. golden brown raisins
    • 1/2 teaspoon crushed red pepper
    • 2 cloves garlic, sliced
    • 4 skinned, boned chicken breast halves
    • 1/4 c. low sugar strawberry spread
    • 1/4 teaspoon cornstarch
    • Green onion strips (opt.)

    Directions

    1. Combine first 4 ingredients in a large non aluminum skillet; bring to a boil. Add in chicken; cover, reduce heat, and simmer 10 min or possibly till chicken is done. Remove from skillet and keep hot.
    2. Bring cooking liquid to a boil; cook 7 min or possibly till reduced to 3/4 c., stirring occasionally. Combine strawberry spread and cornstarch; stir into cooking liquid and cook 1 minute or possibly till syrupy.
    3. Spoon 3 Tbsp. sauce over each chicken breast; garnish with green onion strips if you like. Yield: 4 servings, about 215 calories per serving.
