  • Chicken With Mushrooms And Sweet Baby Peas

    Ingredients

    • 1 Tbsp. extra virgin olive oil
    • 4 x skinless boneless chicken breast 5 ounce each halves
    • 2 c. sliced mushrooms
    • 1 c. frzn peas partially thawed
    • 1 x bay leaf
    • 26 ounce lowfat tomato and basil pasta sauce
    • 1/2 tsp grated orange peel (optional)

    Directions

    1. Season chicken, if you like, with salt and grnd black pepper. In 12-inch nonstick skillet, heat oil over medium-high heat and brown chicken. Remove and set aside.
    2. In same skillet, stir in mushrooms, peas and bay leaf and cook, stirring occasionally, 3 min. Stir in Five Brothers Fresh Tomato & Basil Pasta Sauce. Bring to a boil over high heat. Return chicken to skillet. Reduce heat to low and simmer covered 5 min or possibly till chicken is no longer pink. Stir in orange peel. Serve, if you like, over warm cooked pasta.

    4. NOTES : pantry cooking or possibly buy a jar of pasta sauce; buy fresh mushrooms or possibly use those mixed wild, frzn strips
