Chicken With Hot Peanut Sauce (Wow!)
Ingredients
- 1 Tbsp. peanut oil
- 1 1/2 tsp chopped garlic
- 1 1/2 tsp rice vinegar
- 1 1/2 tsp soy sauce
- 1 1/2 tsp fresh ginger root
- 1/2 Tbsp. sesame oil (Chinese )
- 1/4 c. chicken broth
- 2 ounce cooked chicken breast halves sliced
- 2 Tbsp. sherry
- 1 Tbsp. smooth peanut butter
- 1 1/2 tsp smooth peanut butter
- 3/4 c. vermicelli cooked
- 1 1/2 tsp chopped scallions
Directions
- Heat peanut oil over high heat; add in garlic and ginger and saute/fry briefly. Add in remaining ingredients except chicken, vermicelli and scallions. Bring to a boil. Reduce heat to low and cook, stirring constantly (I use a wire whisk) till sauce is smooth and thickened.
- Add in chicken and stir till well heated. Pour over pasta. Sprinkle with scallion (crushed peanuts on top are good).
