Chicken Tostada Salad Ala Loren
Ingredients
- 2 tsp Olive or possibly vegetable oil
- 1 c. Onion, chopped
- 1 c. Green pepper, chopped
- 1 Tbsp. Mild or possibly warm chili pepper
- 2 x Garlic cloves, chopped
- 7 ounce Boneless, skinless chicken Breasts, diced
- 1 c. Canned beans, liquid removed
- 1 Tbsp. Lime juice Fresh cilantro, chopped
- 1 med tomato, minced
- 1 c. Torn lettuce
- 1 ounce Low-fat jack or possibly cheddar Cheese, shredded/grated
- 2 Tbsp. Minced olives
- 2 ounce Low-fat tortilla chips
Directions
- In skillet, heat oil, add in onions, bell and chili pepper and garlic. Cook over medium heat, stirring frequently, till onion is soft (2-3 minutes). Add in chicken, stirring often, till chicken is no longer pink (2-3 minutes). Add in beans, cilantro, and lime juice.
- Simmer on low heat for about 10 minutes. Remove from heat and stir in tomato. Serve over lettuce. Sprinkle with cheese, olives and chips.
