  • Chicken Tostada Salad Ala Loren

    Ingredients

    • 2 tsp Olive or possibly vegetable oil
    • 1 c. Onion, chopped
    • 1 c. Green pepper, chopped
    • 1 Tbsp. Mild or possibly warm chili pepper
    • 2 x Garlic cloves, chopped
    • 7 ounce Boneless, skinless chicken Breasts, diced
    • 1 c. Canned beans, liquid removed
    • 1 Tbsp. Lime juice Fresh cilantro, chopped
    • 1 med tomato, minced
    • 1 c. Torn lettuce
    • 1 ounce Low-fat jack or possibly cheddar Cheese, shredded/grated
    • 2 Tbsp. Minced olives
    • 2 ounce Low-fat tortilla chips

    Directions

    1. In skillet, heat oil, add in onions, bell and chili pepper and garlic. Cook over medium heat, stirring frequently, till onion is soft (2-3 minutes). Add in chicken, stirring often, till chicken is no longer pink (2-3 minutes). Add in beans, cilantro, and lime juice.
    2. Simmer on low heat for about 10 minutes. Remove from heat and stir in tomato. Serve over lettuce. Sprinkle with cheese, olives and chips.
