  • CHICKEN TORTILLA SOUP

    A hearty, zesty soup to fill your belly and warm you up!! BUEN PROVECHO!!!!

    Ingredients

    • 4 cups chicken broth
    • 2 or 3 cups of cut up leftover chicken
    • ½ cup of salsa
    • 1 can of diced tomatoes
    • 1 can of black beans
    • 1 or 2 cups of frozen corn
    • A squeeze of lime
    • Seasonings weren’t measured….I just go by taste
    • Cumin
    • Chili Powder (I use regular, but if you like it hot, use cayenne)
    • Garlic powder
    • Cilantro
    • A little salt (Optional...chicken broth probably already has quite a bit of sodium in it)
    • Pepper
    • Minced Onion (Dried)

    Directions

    1. Put the broth in a large saucepan and heat just to boiling. Add seasonings, salsa and tomatoes. Let it simmer for 10 or 15 minutes. Add corn, beans, chicken and lime juice and continue to simmer for 10 minutes. Garnish with crushed tortilla chips….or if you’re feeling creative, you can make homemade tortilla strips.
