  • Chicken Tikka Kebabs

    Ingredients

    • 2 lb Skinless boneless chicken breast halves, cut into 1-inch pcs
    • 1/4 c. Fresh lemon juice
    • 1/2 tsp Salt
    • 1/4 c. Plain yogurt
    • 4 x Garlic cloves, chopped
    • 1 1/2 Tbsp. Grnd coriander
    • 2 tsp Grnd cumin
    • 1 tsp Grnd turmeric
    • 1/8 tsp Grnd ginger
    • 1 pch Dry crushed red pepper
    • 12 x Bamboo skewers, soaked in water 30 min (6- to 8-inch)
    • 2 Tbsp. Butter, melted (1/4 stick)

    Directions

    1. Combine chicken, 1/4 c. lemon juice and 1/2 tsp. salt in medium bowl; let stand 30 min.
    2. Mix 1/4 c. plain yogurt, chopped garlic, 1 1/2 Tbsp. coriander, 2 tsp. cumin, 1 tsp. turmeric, 1/8 tsp. ginger and crushed red pepper in small bowl. Add in to chicken and stir till chicken is well coated with spice mix. Chill chicken at least 3 hrs or possibly overnight.
    3. Prepare barbecue (medium-high heat). Thread chicken on skewers, dividing equally. Brush chicken with melted butter. Season with salt.
    4. Grill kebabs till just cooked through, turning frequently, about 7 min.
    5. Serves 6.
