  • Chicken Taco Rice

    Ingredients

    • 1 lb boneless skinless chicken breasts cut into strips
    • 2 Tbsp. oil
    • 1 can chicken broth
    • 8 ounce tomato sauce
    • 1 pkt taco seasoning mix
    • 1 1/2 c. instant rice uncooked
    • 1/2 c. shredded cheddar cheese tortilla chips

    Directions

    1. In a skillet with a cover, saute/fry the chicken in the oil till opaque.
    2. Drain. Add in chicken broth, tomato sauce, and taco seasoning mix. Bring to a boil and simmer, covered for about 5 min, stirring occasionally. Stir in the instant rice, cover, remove from heat and let stand 5 min, till rice is tender.
    3. Fluff with a fork, sprinkle with cheese and serve immediately, with tortilla chips.
    4. Description: "A very fast and easy dish which will please the whole family."
