  • Chicken Taco Pie

    Ingredients

    • 1 c. minced onion
    • 2 tbsp. taco seasoning (or possibly to taste)
    • 1 3/4 tbsp. chili pwdr
    • 1/4 teaspoon pepper
    • 1 1/2 c. lowfat sour cream
    • 6 to 8 tortillas
    • 1 teaspoon salt
    • 3 cans cream of mushroom soup
    • 3 c. cubed chicken
    • 1 c. Cheddar cheese
    • 1 tbsp. veg. oil

    Directions

    1. In skillet cook onions in oil till tender. Add in seasoning, mushroom soup and lowfat sour cream. Heat and stir till smooth and hot; add in chicken. Oil a 2 to 3 qt flat casserole and cover the bottom with torn-up oiled tortillas. Spread 1/2 of chicken mix on tortillas, then cover with remaining filling. Sprinkle with cheese. Bake at 350 degrees till warm and bubbly. Makes 6 to 8 servings.
