Chicken Stir Fry Over Ramen Noodles
Ingredients
- 2 pkt (3 ounce. each) chicken-vegetable flavor ramen noodles
- 4 tsp peanut or possibly vegetable oil, divided
- 1 lb chicken breast tenderloins, cut into thin strips
- 3/4 tsp salt
- 1/4 tsp freshly grnd pepper
- 2 x red bell peppers, cut into 1-inch pcs
- 1 1/2 tsp grated fresh ginger
- 3 med green onions, cut into 1/2-inch pcs
Directions
- 1. Cook noodles according to package directions.
- 2. Heat 2 tsp. oil in large nonstick skillet over high heat. Sprinkle chicken with salt and pepper; cook 4 min, stirring occasionally, till browned and cooked through. Remove to a large plate.
- 3. Reduce heat to medium-high. Add in remaining 2 tsp. oil to skillet; add in bell peppers and ginger. Cook 2 min. Add in green onions and cook 1 minute more. Return browned chicken to skillet. Remove 1/4 c. liquid from cooked ramen-noodle mix. Add in to chicken-vegetable mix; bring to boil and cook 1 minute.
- 4. Transfer noodles to 4 serving bowls; top each with chicken mix.
- Serve immediately.
- Makes 4 servings.
