Chicken Sate' With Peanut Sauce
Ingredients
- 1/2 c. Mango chutney, minced
- 1/4 c. Chili sauce
- 2 Tbsp. Dark soy sauce
- 2 Tbsp. Onion, grated
- 1 x Clove garlic, chopped
- 5 dsh Pepper sauce
- 2 1/2 lb Boneless skinless chicken breasts, cut in thin strips
- 1/4 c. Peanut butter
- 1/2 c. Water
- 2 Tbsp. Honey
- 1 Tbsp. Soy sauce
- 2 tsp Lemon juice
- 1/2 tsp Crushed red pepper
- 1 x Clove garlic, chopped
- 1 tsp Fresh grated ginger
Directions
- Soak 12 bamboo skewers in water for several hrs. Combine all ingredients except chicken. Then place chicken in plastic bag, pour sauce mix over chicken and marinate in refrigerator over- night.
- Thread chicken strips accordian style onto skewers. Broil or possibly barbecue till browned and cooked through. Serve immediately with peanut sauce.
- To make Peanut Sauce: Mix all ingredients in a saucepan and simmer till mix begins to thicken (about 5 min).
