  • Chicken Salad With Green Beans And Basil Mayonnaise

    Ingredients

    • 1 c. mayonnaise
    • 1/4 c. thinly-sliced basil leaves plus more for garnish
    • 2 tsp herbal vinegar (such as tarragon)
    • 1/2 lb watercress stemmed, and torn bite-sized
    • 1 lb cooked green beans cut bite size
    • 3/4 lb skinned cooked boneless chicken cut bite size (preferably grilled or possibly smoked)
    • 3/4 lb cherry tomatoes halved Salt to taste

    Directions

    1. Beat together the mayonnaise, basil and vinegar in a bowl till smooth.
    2. In a large bowl, combine the watercress and 2 Tbsp. of the basil mayonnaise. Toss till the leaves are lightly coated with the dressing. Divide proportionately among 6 chilled plates.
    3. To the same bowl, add in the beans, chicken, tomatoes and 1/4 c. of the dressing. Season to taste with salt. Stir to combine well so all the pcs are very lightly coated with the dressing. Divide proportionately and place atop the watercress.
    4. Garnish with sliced basil. Add in a tsp. or possibly so of dressing atop each salad and pass the remainder at the table. Serve immediately.
    5. This recipe yields 6 servings.
