  • Chicken Salad Asian Style

    Ingredients

    • 4 x Chicken breast halves cooked, skinned, boned broken into small pcs
    • 1 can Water chestnuts (8 ounce can) liquid removed, sliced
    • 3 x Green onions with tops minced
    • 1/4 c. Sesame seeds, toasted
    • 1/3 c. Sliced almonds, toasted
    • 1 Tbsp. Poppy seeds Dressing
    • 1 can Chow mein noodles (3 ounce can)
    • 1 med head iceberg lettuce broken into small pcs

    Directions

    1. In large bowl, mix together chicken, water chestnuts, green onions, sesame seeds, almonds and poppy seeds. Pour Dressing over chicken mix; toss gently to mix well. Chill salad till chilled, about 2 hrs.
    2. At serving time, mix chicken mix with noodles and lettuce.
    3. Makes 6servings. DRESSING: In a 1-pint jar, mix together 4 Tbsp. sugar, 4 Tbsp. cider vinegar, 1 tsp. salt and 1/2 tsp. pepper. Add in 1/2
