Chicken Rolls A La Russe
Ingredients
- 1 pkg. (6 ounce.) Stove Top chicken flavor stuffing mix
- 1 1/4 c. water
- 2 tbsp. butter
- 6 chicken breast cutlets or possibly Louis Rich turkey breast tenderloin steaks (24 ounce.) pounded about 1/4 inch thick
- 1 egg, beaten
- 1/4 c. oil
Directions
- Finely crush 1 c. of the stuffing crumbs; set aside. Prepare remaining stuffing mix as directed on package, reducing water to 1 1/4 c. and butter to 2 Tbsp.. Spoon onto cutlets in even layer. Roll cutlets; tuck in ends. Dip rolls in egg, then in reserved crumbs. Fry in warm oil in large skillet till golden on all sides, about 15 min. Makes 6 servings, 320 calories each.
