Chicken Provencal
Quick easy chicken dish - even my husband who doesn't cook mastered this one. Ingredients
- 1/2 - 1 white onion (depending how much you like onions)
- 2 tblsp capers
- 3 lbs of bones breast of chicken
- 2 jars tomato sauce
- olive oil
- 1/2 cup white wine
Directions
- Slice the onion into thin slices add olive oil to frying pan and saute the onions until translucent. Remove onions from pan and set aside.
- Add more olive oil and cook chicken until lightly brown on both sides (about 3-4 mins per side) - DOES NOT NEED TO BE COOKED THRU YET.
- Add back the onions to the pan, and add tomato sauce, wine and capers. Stir and then cover and let simmer on very low heat (about 20 minutes - until chicken is cooked through).
- Serve over rice
