  • Chicken &/or Pork Adobo

    Every Filipino has somehow, sometime tasted and cooked this Filipino staple. Great over hot, steamed rice, flaked over pasta or sandwiched in bread with lettuce!

    Ingredients

    • 1/2 kilo chicken or pork, cut into 1 1/2 inch squares
    • 1 head of garlic, chopped coarsely
    • 1 head of red onion, chopped coarsely
    • 2-3 bay leaf
    • 1/4 cup soy sauce (for marinating)
    • 1/2 cup soy sauce (adjust to taste)
    • 1 cup water
    • 1/4 cup vinegar
    • salt
    • pepper (whole and coarsely grounded)
    • corn oil for sauteing

    Directions

    1. marinate meat in 1/4 cup soy sauce and pepper for about 10 minutes. This is optional but adds considerable flavor to the meat.
    2. in a pan, heat oil and saute meat until it is brown
    3. add say sauce, garlic, onion and bayleaf and water. simmer until meat is tender and sauce is reduced to half.
    4. Add salt and pepper according to taste.
    5. Add vinegar and simmer over low heat. Do not stir until the vinegar is fully cooked ( you will taste that the "sourness" of the vinegar has mellowed). Let it simmer in low fire for about 5 minutes.
    6. The sauce should be very reduced by now.
    7. You may serve this already over steamed rice or you may store and fry in a little oil the next day......

        Yes, do try it please. I advice to experiment on the saltiness of the dish to adapt to your taste. The recipe I posted is estimated. Some people add a 1/2 sugar, but the popular one does not have it. I hope you enjoy it! God bless!

          Thanks for sharing, Salt & Pepper! There are a few Chicken Adobo recipes on the site, but none from someone living in the Philippines. Will be good to try a truly authentic one!
