  • Chicken Mozzarella With Smoked Ham

    Ingredients

    • 4 lrg chicken breast fillets Extra virgin olive oil
    • 150 gm mozzarella, grated or possibly diced
    • 1 sprg fresh rosemary, plus a little extra for garnish
    • 4 slc cooked ham or possibly prosciutto crudo, cut into thin slices Cocktail sticks to skewer
    • 1/2 x glass dry white wine Salt and grnd black pepper
    • 1 Tbsp. extra virgin olive oil
    • 4 x cloves garlic, crushed
    • 1 x 425 gram can SPC onion, garlic & basil tomatoes
    • 10 x fresh basil leaves - torn Salt and grnd black pepper

    Directions

    1. Make a deep incision in each chicken breast.
    2. Fill this with mozzarella, ham and rosemary and seal each with cocktail sticks.
    3. Heat the extra virgin olive oil in a large saute/fry pan and lightly brown the chicken.
    4. Pour over the wine (this will deglaze the pan and burn off the alcohol).
    5. Season and simmer over a low heat for 12-15 min till the chicken is cooked (no pink juices).
    6. Remove from the pan and keep hot.
    7. Make the garlic, tomato and basil sauce in the same pan. Place all sauce
    8. ingredients into the saute/fry pan over a high heat, then simmer till you have a thick, glossy sauce. Check the seasoning.
    9. Serve with the chicken breasts.
