  • Chicken Manicotti

    Ingredients

    • 12 x manicotti shells
    • 8 ounce cream cheese with chives
    • 2/3 c. lowfat milk
    • 1/4 c. Parmesan cheese, grated
    • 3 c. chicken, cooked and minced
    • 10 ounce frzn minced broccoli, thawed and liquid removed paprika
    • 4 ounce pimiento
    • 1/4 tsp pepper
    • 3 ounce white cheddar cheese
    • 3 Tbsp. cottage cheese

    Directions

    1. Preheat oven to 350F. Cook manicotti shells. Drain. Rinse with cool water, drain well. Sauce: in small saucepan stir cream cheese over low heat till melted. Add in Parmesan and cheddar. Stir till melted. Filling: Stir together in mixing bowl; 3/4 c. sauce, cottage cheese, chicken, broccoli, pimiento, black pepper. Stuff each shell with 1/3 c. of filling. Arrange shells in 13x9 dish. Pour remaining sauce over shells.
    2. Sprinkle with paprika. Cover with foil. bake at 350F for 30 min.
