This is one of those dishes that I have to order every single time I go to Chinatown and see them on the menu. I love the crunch of the lettuce, the saltiness of the soy sauce, and the sweetness of the oyster sauce. You can substitute turkey, pork or squab with equally delicious results.

    Ingredients

    • 2 tablespoons peanut oil
    • 1 pound ground dark meat chicken
    • 8 scallions, white and green parts, minced
    • 2 teaspoons cornstarch
    • 2/3 cup water chestnuts, chopped
    • 3 tablespoons soy sauce
    • 1 tablespoon grated fresh ginger
    • 1 tablespoon oyster sauce
    • 1 large head butter lettuce, leaves separated

    Directions

    1. Warm the oil in a skillet or wok over medium-high heat. Add the chicken, scallions, and cornstarch and cook, stirring constantly, until the chicken is cooked and broken into pieces, 3 to 4 minutes. Add the water chestnuts, soy sauce, ginger, and oyster sauce and cook for 1 minute. Remove from the heat.
    2. To serve, take 1 lettuce leaf at a time and spoon a heaping tablespoon of the chicken mixture into the center. Wrap the lettuce around the filling. Serve.

Wow. Even my 2 1/2 year old boy ate this up. Very easy to make, felt healthy, and tastes fantastic. Highly recommend. Added chopped cilantro to the final presentation. Thanks Joanne.

It tasted great. Made this in Tokyo, so rather than 8 scallions, used 3 naganegi; just three filled a normal cereal bowl. Also rather than butter lettuce (Boston lettuce, Bibb lettuce), I used Iceberg lettuce. Worked out well. Great on plain white rice too!

I made this for dinner last night with ground turkey. I also chopped some red pepper and dry roasted salted peanuts as condiments to serve on the side. It was great!

I loved this recipe -- instead of dark meat chicken I used ground chicken breast which makes it a bit healthier. I used iceberg lettuce because I liked the "crunch" effect.

Lettuce wraps is one of my favorite things to make. I love added water chestnuts to give it a great crunch!

OH, these are so terrific. The crunch of iceberg lettuce is great, but I like the ease of working with the butter lettuce.

Thanks so much for this recipe.

I followed this recipe to a tee. Sadly, and I guess I'm the only one, but I didn't like this much at all. It was extremely salty ( and I'm a salt a holic ) and the flavor was nothing to write home about. I love Joanne Weir's recipe so maybe I just did something wrong.

Often ordered these but never cooked them until now. Delicious! The store was out of ground dark chicken so I bought boneless skinless chicken thighs and did the grinding myself! I drained and used the whole 5 ounce can of water chestnuts though for the added crunch. After tasting the cooked result, I added 1 teaspoon of sugar to balance the flavors. Also next time I will use 1 tablespoon of cornstarch, as the sauce was a little runny. Definetely a keeper, and yes I would make this just to top rice for an entree also, as another reviewer noted.

This dish was so delicious. My children couldn't get enough of it. I added sliced bamboo shoots and used turkey, upped the amounts because I was using 1 1/2 lbs. meat. A total keeper. Served it with broccolini (with some black bean sauce) and a little rice.

This recipe is awesome!! For heart healthy reasons, we used boneless skinless chicken breasts shredded, but everything else was the same. We loved it!! Will experiment will other fillings as some of the other comments have suggested next time for variety.

They were good. Used low-salt soy sauce and missed the regular amount. Also wished there was a little more spice; however, this is a quick-fix meal that my son liked as well. P.S. I keep peeled, fresh ginger in my freezer, so I have it at all times, ready to grate (I grate it in its frozen state on a micro-plane).

We always make a hearty hot and sour soup with tofu, prawn etc to along with.
