    Ingredients

    • 3 skinless chicken breast fillets
    • ½ cup butter
    • 2 teaspoons parsley, chopped
    • 2 teaspoons chives, chopped
    • 1 tablespoon lemon juice
    • ¼ cup milk
    • 2 eggs
    • 1 package dry breadcrumbs
    • Oil for deep frying

    Directions

    1. Combine butter, parsley, chives and lemon juice. Refrigerate.
    2. Slice chicken breasts in half lengthwise and pound to flatten. Sprinkle with salt. When butter mixture has hardened, divide into six equal parts and place one in the center of each flattened fillet.
    3. Fold in both ends of the meat and roll.
    4. Secure with toothpicks, ensuring that the butter is completely sealed in the meat.
    5. Beat eggs with milk. Dip chicken rolls into milk and roll in breadcrumbs.
    6. Dip a second time into the egg mixture and then again into the breadcrumbs.
    7. Deep fry for 8-10 minutes.
