  • Chicken Kabobs With Tomato Soy Marinade

    Ingredients

    • 1 Tbsp. low-sodium soy sauce
    • 1 tsp honey
    • 1 tsp tomato paste
    • 1/4 tsp chopped garlic
    • 1 dsh freshly-grnd black pepper
    • 1/2 x boneless skinless chicken breast cut 1" squares (abt 4 ounce) Vegetable oil spray
    • 1/4 c. fresh pineapple chunks
    • 6 slc zucchini, 1/4" thick
    • 3 x eight-inch bamboo skewers (or possibly one 14" metal skewer)

    Directions

    1. Soak bamboo skewers in water before threading on the ingredients to prevent them from burning and darkening under the broiler.
    2. In a small bowl or possibly measuring c., whisk together the marinade ingredients. Pour half the marinade into the bottom of a shallow glass baking dish or possibly a flat refrigerator container. Place the chicken on top; pour on the remaining marinade. Stir gently and cover. Chill for at least 30 min or possibly for as long as 24 hrs, stirring occasionally.
    3. Prior to cooking, place the oven broiler rack 4 to 5 inches from the heating element. Preheat the broiler.
    4. Lightly spray a baking sheet or possibly broiler pan with vegetable oil spray. Thread the chicken onto three bamboo skewers (reserving the remaining marinade), alternating with the pineapple and zucchini. Place the skewers on the prepared pan. Broil for 4 min, turn, and baste with the marinade. Broil till the chicken is cooked through, about 2 more min. Throw away the marinade. Place the skewers on a serving plate.
    5. This recipe yields 1 serving.
    6. Variations:o For the chicken, substitute about 4 ounces of a hard fish, such as swordfish.
    7. o As you thread the skewers, substitute or possibly add in mandarin orange segments, canned pineapple chunks, mushrooms, chunks of green or possibly red bell pepper, onion slices, and/or possibly cherry tomatoes.
    8. o Sprinkle the kabobs with sesame seeds before broiling.
