  • Chicken In Spiced Peanut Butter Sauce

    Ingredients

    • 1 4/5 kg chicken (with giblets) cut into 6 pcs
    • 3 Tbsp. groundnut oil medium onion minced
    • 1 clv garlic crushed
    • 1 x green pepper minced
    • 225 gm butter
    • 570 ml chicken stock made with the giblets tsp. turmeric Tbsp. grnd coriander tsp. grnd cumin
    • 4 tsp warm chilli pwdr
    • 1 x salt and freshly milled black pepper

    Directions

    1. First of all you heat 2 Tbsp. of oil in a large flameproof casserole.
    2. Add in the onion garlic and green pepper and fry these gently till the onion is soft but not brown about 10 min.
    3. Then remove the vegetables to a plate turn up the heat and add in a little more oil.
    4. As soon as it is warm add in the chicken pcs and brown them on all sides return the vegetables to the pan and remove it from the heat.
    5. Now mix together the peanut butter 110ml of the stock the turmeric coriander cumin chilli pwdr and the salt and freshly milled black pepper. Now stir this mix into the saucepan containing the chicken and simmer and stir for 5 min.
    6. Then stir in the remaining stock cover and simmer on top of the stove for a further 30 min.
    7. After which uncover the casserole and cook for another 15 min or possibly till the chicken is tender.
    8. Now taste to check the seasoning and serve. We like this served with brown rice or possibly ribbon noodles.
    9. Serves 4
