Chicken in Mushroom Sauce
Ingredients
- 14 lbs, 12 oz boneless chicken breast
- 2 lbs, 4 oz sliced mushrooms
- 1 1/4 cup margarien
- 3/4 cup, 3 Tbsp cooking sherry
- 1/2 cup, 1 2/3 Tbsp garnish parsley flakes
- 2 3/4 tsp chopped garlic
- 1 gal chicken stock
Directions
- Flatten chicken breasts and trim if necessary. Make sure you are using a 4 oz breast.
- Bake or grill chicken until internal temperature reaches 165 degress for 15 seconds.
- Saute garlic and mushrooms in margarine until mushrooms are cooked. Deglaze pan with sherry.
- Reduce to 1/2. Fold in stock, thicken slightly with corn starch.
- Top charbroiled chicken with mushroom sauce.
- Hold about 140F for service.
