  • Chicken Heart and Liver Adobo

    Strictly speaking, adobo is not a Filipino dish. Rather, it is a way of cooking. One can 'adobo-ize' almost anything -- from chicken to pork to seafood and vegetables. It is the same preparation that is involved, simmering your main ingredient in a mixture of garlic, soy sauce and vinegar. For this recipe, I used chicken hearts and liver. Many would use a trio that also includes gizzards, but I'm not a fan of gizzards, so I skipped it.

    Ingredients

    • 1/2 lb chicken hearts
    • 1/2 lb chicken kiver
    • 3 tbsps Olive oil
    • 5 cloves crushed garlic
    • 1/4 cup soy sauce
    • 1/4 cup vinegar
    • 1 cup water
    • 3 pcs bay leaf
    • 3 tbsps sugar
    • 1 tsp pepper corns
    • Salt and pepper to taste

    Directions

    1. In a large wok, heat Olive oil in medium-high heat.
    2. Saute garlic until golden brown.
    3. Add in hearts and liver and stir-fry until brown. Season with salt & pepper.
    4. Add soy sauce, vinegar, water, bay leaves, sugar, pepper corns. Cook until sauce thickens.
