Chicken Heart and Liver Adobo
Servings: 6by Rene Astudillo112 recipes>Strictly speaking, adobo is not a Filipino dish. Rather, it is a way of cooking. One can 'adobo-ize' almost anything -- from chicken to pork to seafood and vegetables. It is the same preparation that is involved, simmering your main ingredient in a mixture of garlic, soy sauce and vinegar. For this recipe, I used chicken hearts and liver. Many would use a trio that also includes gizzards, but I'm not a fan of gizzards, so I skipped it. Ingredients
- 1/2 lb chicken hearts
- 1/2 lb chicken kiver
- 3 tbsps Olive oil
- 5 cloves crushed garlic
- 1/4 cup soy sauce
- 1/4 cup vinegar
- 1 cup water
- 3 pcs bay leaf
- 3 tbsps sugar
- 1 tsp pepper corns
- Salt and pepper to taste
Directions
- In a large wok, heat Olive oil in medium-high heat.
- Saute garlic until golden brown.
- Add in hearts and liver and stir-fry until brown. Season with salt & pepper.
- Add soy sauce, vinegar, water, bay leaves, sugar, pepper corns. Cook until sauce thickens.
