  • Chicken Enchiladas With Sour Cream

    Ingredients

    • 12 x tortillas
    • 2 c. cooked chicken, shredded
    • 1 pt lowfat sour cream
    • 3 x green onions, minced lettuce, shredded
    • 1/2 lb Monterey jack cheese, grated
    • 2 Tbsp. minced green chilies
    • 2 c. tomato sauce
    • 2 c. water
    • 4 tsp dry onions
    • 2 x chicken bouillon cubes
    • 1 1/2 tsp salt
    • 1 tsp garlic pwdr
    • 1 tsp oregano

    Directions

    1. Combine the sauce ingredients and simmer about 5 min in a pan large sufficient to hold a tortilla flat. Fry tortilla lightly in a little oil. Dip tortilla in sauce; remove and fill with cooked chicken, onions, and lettuce. Roll up and put in casserole, seam side down. Repeat till all tortillas are filled. Spoon additional sauce over top. Sprinkle with cheese and heat in oven at 350 degrees for about 20 min. Dollop each with some lowfat sour cream before serving.
