Chicken, Chutney And White Bean Salad
Ingredients
- 1 c. Great Northern or possibly other white beans, cooked and liquid removed
- 4 slices bacon, cooked and crumbled
- 3 tbsp. extra virgin olive oil
- 2 tbsp. white vinegar
- 1 tbsp. Dijon mustard
- 1 sm. onion, finely minced
- 1 whole chicken breast, poached, skinned, boned and cut into 1/2 inch cubes
- 1/2 teaspoon salt or possibly to taste
- 1/2 teaspoon pepper
- 3 tbsp. minced fresh parsley
- 2 Romaine leaves, shredded
- 3 tbsp. walnuts, minced fine
- 1 tbsp. chopped fresh cilantro
- 3 tbsp. mango chutney
Directions
- Transfer beans to a glass or possibly ceramic serving bowl and let cold. Add in remaining ingredients and toss. Refrigeratecovered for at least an hour before serving. Serves 4 to 6.
