  • Chicken Chili with Red Beans

    A new spicy, not hot, spin on chili. It's so good!

    Ingredients

    • 2 tsps olive oil
    • 1 clove garlic, minced
    • 4 XL Chicken breasts
    • 1- 32 oz. box chicken broth
    • 2 medium onions coarsely chopped
    • 1 large can cream style red beans, undrained
    • 1 can Rotel
    • Dash cayenne pepper (optional)
    • ½ tsp cilantro
    • 1 ½ cups shredded Monterey Jack cheese (optional)
    • 1 Tbls Italian seasoning

    Directions

    1. Heat the oil in a large saucepan and sear chicken until very light brown. Remove chicken and place on cutting board. Cut chicken into cubes and also cut away excess fat. Stir the onion into the leftover oil and cook until tender, 4 to 7 minutes. Mix in the Rotel, garlic, cilantro and Italian seasoning and cook about 3 minutes. Mix in the chicken broth, chicken and beans. Bring to a boil. Turn down heat and simmer 20 minutes or until chicken is thoroughly cooked, stirring occasionally.
    2. Serve topped with grated cheese, chopped fresh tomato, salsa, chopped green onions, guacamole, and warmed flour tortillas or tortilla chips on the side, if desired.
