  • Chicken Cashew Stir Fried Rice

    Ingredients

    • 1 1/4 lb Cooked rice
    • 10 ounce Uncooked rice
    • 1 x Onion
    • 1 x Red pepper
    • 2 x Chicken breast fillets
    • 2 x Large eggs
    • 4 ounce Green beans
    • 4 ounce Sweetcorn
    • 2 ounce Roasted salted cashews
    • 2 Tbsp. Dark soy sauce
    • 1 tsp Sesame oil

    Directions

    1. Top and tail green beans. Cook green beans and sweetcorn in salted boiling water till just tender; drain and chop into 1/2in/1cm pcs.
    2. De-seed red pepper and dice finely. Beat Large eggs. Cut chicken into cubes.
    3. Heat wok. Add in oil. Fry chicken till whitened. Add in onion and red pepper. Stir-fry for 1 minute.
    4. Add in rice, green beans and sweetcorn to wok. Stir-fry for 5 min.
    5. Add in soy sauce and sesame oil. Stir-fry for 5 min. Add in soy sauce and sesame oil. Stir-fry for 1 minute.
    6. Add in beaten egg, cashews and grnd pepper. Stir-fry for 2 min till egg set. Serve at once.
