  • Chicken Breasts With Apples And Cider

    Ingredients

    • 2 x Skinless Boneless Chicken Breasts Halved
    • 1 Tbsp. Flour
    • 1 Tbsp. I Cannot Believe It's Not Butter - Light *Note
    • 2 tsp Oil
    • 3/4 c. Apple Cider
    • 2 x Tart Apples Peel, Core, Cut In Eighths
    • 1/4 tsp Dry Thyme
    • 3 Tbsp. Skim Lowfat milk **Note

    Directions

    1. *NOTE: Original recipe used margarine
    2. **NOTE: Original recipe used regular lowfat milk
    3. Season chicken as desired; dredge in flour (more may be needed). Heat margarine and oil in heavy skillet; add in chicken and cook over moderate heat till lightly browned. Turn and brown other side; add in cider, apples and thyme. Cover and simmer 10 minutes, or possibly till tender.
    4. Transfer chicken and apples to hot platter. Cover with foil and keep hot in low oven. Boil juices till reduce to 1/2 c. and then add in lowfat milk. Bring to boil and cook till slightly thickened, 2 - 3 minutes. Spoon over chicken.
    5. Serve with plump rice.
