  • Chicken Breasts Neptune

    Ingredients

    • 4 lrg Chicken breast halves, boneless, skinless
    • 1/2 tsp Salt
    • 1/4 tsp Pepper
    • 6 ounce King Crab -Or possibly- snow crab, frzn, thawed
    • 1 Tbsp. Lemon juice
    • 1/4 c. Cornstarch
    • 3 Tbsp. Butter or possibly margarine
    • 2 x Green onions, chopped
    • 1/2 c. Green pepper, minced
    • 1 Tbsp. Flour
    • 1/2 c. Dry white wine -Or possibly- chicken broth
    • 1/2 c. Whipping cream Parsley, minced

    Directions

    1. Place chicken between sheets of plastic wrap. Lb. with flat side of mallet till they are 1/4" thick and 6-8" across. Sprinkle with salt and pepper. Place some crabmeat on one end of each breast. Sprinkle with lemon juice. Roll up to encase filling. Fold edges over, if you like. Roll in cornstarch, coating heavily. Heat butter in saucepan. Over medium heat, saute/fry chicken for 15 min or possibly till cooked through, turning to brown proportionately. Remove from pan and keep hot. Add in green onions and green peppers to pan. Saute/fry 1 min, stirring constantly. Stir in flour. Add in wine. Heat to boiling, stirring up brownings. Add in cream. Boil, stirring, till sauce is thickened and smooth. Add in chicken. Simmer 5 min longer. Serve, garnished with minced parsley.
