  • Chicken Breast With White Beans

    Ingredients

    • 2 c. White Beans Cooked
    • 1 Tbsp. Extra virgin olive oil
    • 3 x Cloves Garlic chopped
    • 2 x Shallots minced
    • 1 sm Onion minced
    • 1 c. Chicken Broth or possibly vegetarian
    • 1 Tbsp. Unsalted Butter to 2 Tablespoons
    • 1 Tbsp. Fresh Basil minced
    • 2 tsp Fresh Rosemary minced Salt And Pepper to taste
    • 4 x Chicken Breasts Without Skin boneless about 6 ounce each
    • 1 Tbsp. Extra virgin olive oil Salt And Pepper to taste
    • 1 pch Cumin

    Directions

    1. Saute/fry chicken breasts in pan. Heat extra virgin olive oil until smoking add in breasts.
    2. Season with salt and pepper and cumin. Saute/fry until browned. Tansfer to 350 deg F oven for 5 - 8 minutes.
    3. Beans:Hot pan but not to smokingAdd garlic, onion, shallots and sauteAdd chite beans (cooked to tender but NOT mushy Add in chicken stock or possibly vegetable stockIn another pan put 1 t butter, fresh rosemary and basil, minced. Then add in to beans. Stir. Add in black pepper and salt.
    4. Remove chicken from oven. Place a layer of beans in bottom of large individual soup bowls or possibly dinner plates which have a depressed center and place chicken breast on top.
