Chicken And Yellow Rice
If you don't want to use a whole chicken, you can use whatever type you prefer. Ingredients
- 1 lg. frying chicken
- 1 onion, diced
- 2 cloves garlic; crushed
- 1/2 c. extra virgin olive oil
- 6 ounce. tomatoes
- 1 1/2 quart. water
- 1 bay leaf
- Healthy pinch of saffron
- 2 tbsp. salt
- 1 pound rice
- 1 green pepper, diced
- 2 pimentos or possibly small jar
- Small can green peas
Directions
- Cut chicken into quarters.
- Fry with onion and garlic in extra virgin olive oil until brown.
- Add in tomatoes and water. Boil 5 min.
- Add in bay leaf, saffron, salt, rice and diced pepper. Stir thoroughly. Place in a large casserole and bake in 350 degree oven 20 min. Garnish with peas and pimentos.
