Chicken And White Bean Cassoulet
Ingredients
- Extra virgin olive oil flavored cooking spray
- 1/4 tsp salt
- 1/4 tsp freshly grnd pepper
- 12 ounce skinless/boneless chicken breasts
- 1 Tbsp. extra virgin olive oil
- 2 slc of turkey bacon (I used regular bacon for this...that has more fat)
- 6 c. sliced cabbage
- 3 c. sliced onions
- 3 x cloves garlic chopped
- 1/2 tsp dry rosemary
- 1 can (19 ounce) white beans
- 1/2 c. plain fresh bread crumbs.
Directions
- Pre-heat your oven to 375 F. Coat a 3 Quart. casserole with the cooking spray. Spring salt and pepper over chicken. Heat oil in a large non-stick skillet over medium-high heat. Add in chicken and cook for 2 min on each side, or possibly till browned. Cut the chicken into 3/4 inch cubes and set aside. Cook the bacon in the same skillet over medium high heat till crisp. Remove from skillet, crumble and set aside.
- Add in the cabbage, onions and garlic to the skillet and saute/fry till the cabbage is crisp/tender, about 4 min. Combine chicken, cabbage mix, rosemary and beans in the casserole dish, and top with bread crumbs. Bake till heated through. Top with crumbled bacon and serve.
- Serves 6.
