  • Chicken and Rice Soup

    Ingredients

    • Vegetable oil
    • 3 oz Chicken, cooked and diced
    • 1 cup Spanish Onions, peeled, and diced
    • 1 cup Celery, diced small
    • 1 cup Carrots, washed peeled, diced small
    • 1 cup Minced Garlic
    • 1 cup Bay leaves
    • 1 cup Crushed red peppers
    • 1 cup Green Onion, green part only
    • 1 1/2 gallon Chicken Stock
    • 1 lb Long Grain Rice, cooked

    Directions

    1. In a steam kettle, heat the oil, saute all onions, celery and carrots for 4 minutes
    2. Add garlic, bay leaves. a pinch of crushed red pepper and saute for one minute
    3. Add the stock and bring the liquid to a boil.
    4. Reduce the heat to a simmer. Reseason if necessary.
    5. Add the rice and grean onions and continue to cook for approximately 5 minutes.
    6. Then serve.
