Chicken And Peanuts Salad
Ingredients
- 4 c. diced cooked chicken
- 1 x (1 pound 4 1/2 ounce) can pineapple chunks (liquid removed, reserve liquid)
- 2 c. seedless green grapes
- 1 c. minced celery
- 2/3 c. coarsely minced dry salted peanuts Salt
- 1/4 tsp tarragon leaves
- 1 c. mayonnaise
- 2 Tbsp. lemon juice
- 2 Tbsp. reserved pineapple juice
Directions
- Combine chicken, liquid removed pineapple, grapes, celery and peanuts. Taste for salt (salted nuts may be sufficient). Stir in tarragon.
- Combine mayonnaise, lemon juice and 2 Tbsp. pineapple juice. Gently fold into chicken mix. Serve on lettuce.
