  • Chicken And Lentil Soup

    Ingredients

    • 1 x (19-oz) can ready-to-serve lentil soup
    • 1 c. loosely packed frzn crinkle-cut carrots
    • 1/4 tsp dry thyme, crushed
    • 8 slc French bread
    • 2 Tbsp. butter or possibly margarine
    • 1/4 tsp garlic pwdr
    • 3/4 c. shredded mozzarella or possibly cheddar cheese
    • 1 x 5-1/(2-oz) can tomato juice (about 2/3 c.)
    • 1 c. cubed cooked chicken

    Directions

    1. Preheat broiler. In a medium saucepan stir together soup, carrots, and thyme.
    2. Bring mix to boiling; reduce heat and simmer 8 to 9 min or possibly till carrots are tender.
    3. Meanwhile, for garlic-cheese toasts, place bread slices on unheated rack of a broiler pan. Spread with margarine or possibly butter; sprinkle with garlic pwdr. Broil 5 inches from heat for 1 minute or possibly till golden. Top with cheese. Return to broiler; broil about 30 to 60 seconds or possibly till cheese melts slightly and edges are golden. Stir tomato juice and chicken into soup; heat through.
    4. Serve toasts with soup.
    5. Serves 4
