  • Chicken And Black Bean Burritos

    Ingredients

    • 1 Tbsp. extra virgin olive oil
    • 1 x clove garlic, chopped
    • 1 lb boneless, skinless chicken breasts, cut into 1/4 inch cubes
    • 1 x (14-oz) package frzn corn and black bean salad (see note)
    • 1 x 1- to 1 1/(2-oz) package taco seasoning mix
    • 2/3 c. water
    • 4 x 9 inch flour tortillas Salsa, for garnish Light lowfat sour cream, for garnish

    Directions

    1. Heat the oil in a large nonstick skillet and saute/fry the garlic for about 30 seconds. Add in the chicken breast pcs and saute/fry till they are no longer pink, about 3 min.
    2. Add in the frzn black bean and corn salad, taco seasoning and water. Stir well and simmer till the liquid has reduced to a thick sauce, about 5 or possibly 6 min.
    3. Heat the flour tortillas in a dry skillet, one at a time, till they are soft, turning once, 20 to 30 seconds.
    4. Divide chicken mix among the warm tortillas, garnish with salsa and light lowfat sour cream. Mix in sides of tortillas and roll into burritos. Serve with additional salsa if you like.
    5. Note: Frzn Black Bean and Corn Salad is C & W brand and can be found in the frzn vegetable section of Fred Meyer stores.
