  • Chicken A La Salvatore [House Specialty]

    Ingredients

    • 2 x Boneless and skinless chicken breast halves, (5 to 6 ounces each)
    • 1/2 tsp Salt
    • 1/2 tsp Pepper
    • 1/2 tsp Granulated Garlic
    • 1 x Egg
    • 1/2 c. Lowfat milk
    • 1 c. Flour
    • 1 Tbsp. Vegetable oil
    • 1 Tbsp. Butter
    • 1 c. Shredded mozzarella cheese Mushroom sauce, (see recipe)

    Directions

    1. Flatten chicken breasts to desired thickness, about 1/8- to 1/4-inch. In bowl, combine seasonings with egg and lowfat milk. Dip chicken into egg mix, coat with flour.
    2. Saute/fry in skillet in combined oil and butter 4 to 5 min over medium heat or possibly till golden and no longer pink in center, turning to brown both sides.
    3. Meanwhile, preheat broiler.
    4. Top chicken with cheese and broil till cheese melts, 30 seconds to 1 minute. Remove from heat and keep hot while preparing mushroom sauce. To serve, top chicken with mushroom sauce. Serve immediately.
    5. Sauce:1 Tbsp. vegetable oil 1 Tbsp. butter 1 c. fresh or possibly canned and liquid removed mushrooms, sliced 1 c. minced onions 1/2 tsp. salt 1/2 tsp. pepper 1/2 tsp. granulated garlic 1/8 c. Marsala wine
    6. Combine oil and butter in saucepan over medium heat. Add in mushrooms and onions and sautee about 2 min. Add in seasonings, then wine. Simmer about 1 minute. Spoon over chicken to serve.
