    Chewy Oatmeal Raisin Date Cookies

    Ingredients

    • 1 1/2 cups oats (old-fashioned)
    • 1/2 cup all-purpose flour (spooned and leveled)
    • 1/2 cup raisins
    • 1/2 cup dates (chopped, pitted)
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 6 teaspoons butter (unsalted, room temperature)
    • 1/2 cup dark brown sugar (packed)
    • 1/4 cup sugar (white)
    • 1/4 cup pecans
    • 1 egg
    • 1 teaspoon vanilla extract

    Directions

    1. Preheat oven to 350 degrees.
    2. Soak the raisins for 15-20 minutes before cooking.
    3. Chop the dates and set aside.
    4. Chop pecans and set aside.
    5. In a medium bowl, whisk together oats, flour, raisins, baking soda, and salt; set aside.
    6. Using an electric mixer, beat butter and sugars until light and fluffy, scraping down bowl as necessary.
    7. Add egg and vanilla; beat until combined. Gradually add oat mixture; beat just until combined.
    8. Drop dough by rounded tablespoonfuls, 2 inches apart, onto two baking sheets.
    9. Bake until cookies are golden brown but still soft, 12 to 16 minutes, rotating sheets halfway through.
    10. Cool 5 minutes on sheets; transfer cookies to a wire rack to cool completely.
