Chewy Holiday Macaroons
Great for the Holidays Ingredients
- 1/2 cup butter, softened
- 3/4 cup sugar
- 1/8 tsp salt
- 3 eggs
- 1/2 tsp almond extract
- 5 to 7 drops red and/or green food color, if desired
- 9 cups sweetened flaked coconut
- 3 tbsp powdered sugar
Directions
- Heat the oven to 325 F.
- Combine the butter, sugar, and the salt in a large bowl
- Beat at medium speed until creamy
- Add the eggs, almond extract, and the food coloring, if desired
- Continue beating until well mixed.
- Stir in the coconut using a wooden spoon until well mixed
- Drop the dough, by rounded tablespoonfuls or using a cookie scoop, onto parchment paperlined or greased cookie sheets.
- Bake for 20 to 22 minutes or until the edges are lightly browned
- Let stand for five minutes on the cookie sheets
- Remove to wire racks
- Cool completely
- Sprinkle with powdered sugar
