  • Chewy Holiday Macaroons

    Ingredients

    • 1/2 cup butter, softened
    • 3/4 cup sugar
    • 1/8 tsp salt
    • 3 eggs
    • 1/2 tsp almond extract
    • 5 to 7 drops red and/or green food color, if desired
    • 9 cups sweetened flaked coconut
    • 3 tbsp powdered sugar

    Directions

    1. Heat the oven to 325 F.
    2. Combine the butter, sugar, and the salt in a large bowl
    3. Beat at medium speed until creamy
    4. Add the eggs, almond extract, and the food coloring, if desired
    5. Continue beating until well mixed.
    6. Stir in the coconut using a wooden spoon until well mixed
    7. Drop the dough, by rounded tablespoonfuls or using a cookie scoop, onto parchment paperlined or greased cookie sheets.
    8. Bake for 20 to 22 minutes or until the edges are lightly browned
    9. Let stand for five minutes on the cookie sheets
    10. Remove to wire racks
    11. Cool completely
    12. Sprinkle with powdered sugar
