Cherry Surprise Cupcakes
Ingredients
- 1 pkt devil's food cake mix without pudding (18.5 ounce)
- 2 pkt cream cheese - (3 ounce ea) softened
- 3 Tbsp. confectioners sugar
- 1 lrg egg
- 1 can cherry fruit filling - (21 ounce)
Directions
- Prepare cake mix according to package directions. Spoon batter into paper baking c. in muffin pans, filling two-thirds full.
- Beat cream cheese, confectioners sugar, and egg at medium speed with an electric mixer. Spoon 1 heaping tsp. cream cheese mix into center of each cupcake. Top proportionately with 1 heaping tsp. fruit filling.
- Bake at 350 degrees for 25 min. Remove from pans, and cold on a wire rack. Serve with remaining fruit filling.
- This recipe yields 2 1/2 dozen.
- Yield: 2 1/2 dozen
