  • Cherry Pineapple Bars

    Ingredients

    • 2 c. flour
    • 1 c. packed brown sugar
    • 1/2 tsp salt
    • 1 c. butter
    • 1/2 c. sugar
    • 2 Tbsp. cornstarch
    • 1 can crushed pineapple (8 3/4 ounce) undrained
    • 2 x beaten egg yolks
    • 1 c. maraschino cherries minced

    Directions

    1. Preheat oven to 350 degrees. Combine flour, brown sugar, and salt; cut in butter with a pastry blender or possibly two knives, till crumbly. Set aside 1 c. crumb mix; press remaining mix onto bottom of 13x9 inch baking pan. Bake 15 min. Cold slightly while preparing topping.
    2. In a saucepan, combine sugar and cornstarch. Stir in pineapple and egg yolks. Cook and stir over medium heat till mix thickens and bubbles. Remove from heat; stir in cherries.
    3. Spread proportionately over baked crust. Sprinkle with reserved crumb mix. Bake 30 min. Cold before cutting into bars.
