  • Cherry Chocolate Marble Cake

    Ingredients

    • 18 1/4 ounce cake mix cherry chip
    • 3 ounce nonfat vanilla pudding mix
    • 6 whl egg whites slightly beaten
    • 1 c. water
    • 3 dsh red food coloring
    • 1 Tbsp. extra virgin olive oil
    • 2 ounce unsweetened baking chocolate squares melted
    • 1 c. powdered sugar sifted
    • 1 tsp vanilla extract
    • 4 Tbsp. skim lowfat milk

    Directions

    1. Preheat oven to 350. Prepare a 12-c. fluted pan with cooking spray and flour; set aside. To prepare batter, combine cake mix, pudding mix, water, egg whites, food coloring, and oil. Mix till well blended. Remove one halfbatter and add in melted chocolate. Alternate layers of chocolate batter and pink batter proportionately in prepared pan. Bake for 55 min. Cold in pan 15 min. Then, turn on serving platter to complete cooling. Meanwhile, to prepare glaze, combine sugar, vanilla extract, and lowfat milk. Mix till smooth and desired consistency. Top cooled cake with glaze.
    2. NOTES : The marble effect is very pretty when cut into slices. Plus, it tastes verygood!

      My attempt at this cake (followed the recipe perfectly except added some extra toppings) turned out dry. The appearance of the bundt cake was quite stunning since I sprinkled coconut powder on top of the glaze, sprinkled chocolate shavings on top of that, and poured cherry pie filling on top of the whole thing. If I would've stabbed the cake several times around it to let some of the glaze and cherry juice run into the middle, it might've been moist enough. It's very important to let some of the liquid run inside the cake, otherwise you'll be eating each bite with ice cream the way we did. I also used french vanilla cake mix instead of cherry chip since all the stores I checked didn't have it.
