  • Cherry Cheese Cake Pie

    Ingredients

    • 1 x Unbaked 9" Pie Shell
    • 2 can Pitted red tart cherries
    • 16 ounce size, reserve liquid
    • 1/2 c. Sugar
    • 1 Tbsp. Cornstarch
    • 1/4 c. Liquid liquid removed from cherrie
    • 1 tsp Lemon juice
    • 1/8 tsp Almond extract
    • 1 1/2 pkt 8 ounce size cream cheese
    • 1/2 c. Sugar
    • 2 x Large eggs
    • 1/2 tsp Vanilla

    Directions

    1. 1. Heat oven to 425 degrees.
    2. 2. For filling, drain cherries, reserving the 1/4 c. liquid. Combine sugar and starch in large bowl, lemon juice and almond extract. Stir in cherries. Spoon into unbakes pie shell.
    3. 3. Bake at 425 degrees F. for 15 min.
    4. 4. For topping, combine cream cheese, sugar, Large eggs and vanilla in bowl. Beat with electric mixer till well blended.
    5. Spoon over warm cherry filling. Reduce oven temperature to 350 degrees. Bake for 25 min. Cold to room temperature before serving.
