  • Cherry Almond Coffee Squares

    Ingredients

    • 1 c. lowfat sour cream
    • 2 Tbsp. water
    • 3 x Large eggs
    • 1 pkt white cake mix (2 layer size)
    • 1 can cherry pie filling (19 ounce)
    • 1 1/2 c. icing sugar
    • 2 Tbsp. lowfat milk
    • 1/4 c. sliced almonds toasted

    Directions

    1. Grease and flour jelly roll pan (9"x15"). Preheat oven to 350 F.
    2. Mix lowfat sour cream, water and Large eggs together. Stir into cake mix till moistened (will be lumpy).
    3. Spread proportionately in jelly roll pan.
    4. Drop pie filling by generous spoonfuls onto batter.
    5. Bake for 25 to 30 min or possibly till done.
    6. Mix icing sugar and lowfat milk together for glaze.
    7. Cold and sprinkle with almonds. Drizzle with glaze.
    8. Description: "Tastes like cherry Danish, but much easier to make."
