Chef Bill Hahne's New Orleans Jambalaya (A Healthier Way)
Ingredients
- 2 ounce Canola oil
- 2 lrg onions, minced
- 2 stalk celery, minced
- 2 x Bell peppers, minced
- 3 x Cloves garlic, chopped
- 1/2 lb Turkey ham, cubed
- 5 x Chicken breasts, in strips
- 32 ounce Converted rice (Uncle Ben's)
- 6 c. Low sodium chicken stock
- 2 Tbsp. Thyme
- 1 tsp Powdered bay leaf
Directions
- In a very heavy 4 qt stockpot, over medium heat, saute/fry trinity and garlic in oil till they are tender.
- Add in ham, chicken, rice. Continue to cook, stirring often till rice is slightly browned.
- Add in stock, bring to a boil. Reduce to simmer and cover tightly and simmer 30 min.
- Remove cover, add in thyme and bay. Continue cooking 15 min, occasionally tossing rice to fluff.
- Season with warm sauce to taste.
