Cheesy Yellow Squash Casserole

- 1 tbs. olive oil
- 1 tbs. butter
- 2 lbs. yellow squash, or about 6 medium
- 2-3 scallions, chopped
- 1 beaten egg
- 1/2 cup sour cream
- 1/2 cup milk
- 1/2 cup crumbled saltines or buttery Ritz crackers, tossed in melted butter, OR dry cornbread dressing
- 1 cup shredded cheese, divided
- 1/4 tsp. oregano
- salt and pepper to taste
- paprika
Directions
- Heat oven to 350 F.
- Slice or coarsely chop squash.
- Saute squash and onions in oil/butter.
- In a 2 qt baking dish, stir beaten egg with sour cream, milk, crackers, half the cheese, and seasonings.
- Stir in cooked squash.
- Bake 30 minutes, uncovered.
- Top with rest of cheese and paprika.
- Serve when cheese has melted.
