    Cheesy Meatloaf is the ultimate comfort food that always takes you back home. This is the moistest, juiciest variation with a couple extra cheesy surprises! Your kids will love it!

    Ingredients

    • 1 pound ground beef
    • 1 egg, beaten
    • ½ teaspoon salt
    • ½ teaspoon garlic powder
    • ¼ teaspoon onion powder
    • ¼ teaspoon black pepper
    • 1 teaspoon seasoned salt (I use Lawry’s)
    • 1 medium onion, chopped
    • 1 medium red bell pepper, chopped
    • 1 cup sharp cheddar cheese, grated
    • 2 tablespoons Worcestershire sauce
    • ½ cup sour cream
    • 1 cup crushed crackers (I have only used Ritz)
    • (2 slices bread-optional for lining a loaf pan on the bottom)
    • For Glaze:
    • 1 jar (12 oz) chili sauce (I recommend Homade)
    • 1 teaspoon brown sugar

    Directions

    1. Preheat oven to 350°F. Mix all meatloaf ingredients together, except the 2 bread slices and Glaze. Shape into a loaf. Line a 1½ quart loaf pan with the bread slices (the bread absorbs the grease and should be discarded after loaf is removed from oven).
    2. In a small bowl combine the chili sauce and the brown sugar. Stir well.
    3. Place meatloaf on top of the bread slices and pour the glaze mixture over the top. Bake loaf for 45-50 minutes, or until done.
