Cheesy Egg Burritos
Ingredients
- 1 Tbsp. margarine
- 6 x Large eggs beaten
- 2 Tbsp. lowfat milk
- 1/4 lb processed cheese spread
- 6 x flour tortillas
- 1/2 c. shredded lettuce
- 1/2 c. minced tomato
- 8 ounce Ortega salsa - thick & chunky (medium)
Directions
- In a saucepan over low heat heat margarine; add in beaten Large eggs with lowfat milk. Cook slowly, stirring occasionally, till Large eggs set. Add in diced processed cheese spread and continue cooking till the cheese melts.
- Divide over flour tortillas; top with shredded lettuce and minced tomato. Serve with salsa.
- This recipe yields 6 servings.
