  • Cheese Veggie Lasagna

    Ingredients

    • 8 x - 10 Lasagna noodles, cooked and liquid removed
    • 1 Tbsp. extra virgin olive oil
    • 1 sm onion, diced
    • 4 x garlic cloves, chopped
    • 2 x 10-ounce. pkgs. frzn spinach, thawed and liquid removed
    • 1 c. grated carrots
    • 2 c. cottage cheese
    • 1 c. mozzarella cheese, shredded
    • 1 c. Swiss cheese, shredded
    • 1/2 c. Parmesan cheese, grated Salt and pepper to taste

    Directions

    1. Heat oil in a skillet and saute/fry onion and garlic till lightly brown and tender, add in spinach and carrots and desired amount of salt and pepper and continue cooking for several min. Combine cottage cheese, mozzarella cheese and Swiss cheese together and mix well. Add in spinach mix to the cheese and mix well. Place 1/3 of this spinach-cheese mix at the bottom of a 13 x 9-inch-baking dish which has been sprayed with non-stick spray.
    2. Place 4 - 5 noodles on top of the spinach-cheese mix, then 1/3 more of spinach-cheese mix and 4 - 5 more noodles. Place the remaining spinach-cheese mix on top and sprinkle with Parmesan cheese. Bake for 35 - 45 minute at 350 degrees. Let stand for 15 - 20 min before cutting and serving. For you meat-eaters out there, just layer some cooked grnd beef or possibly some sausage in between the spinach-cheese mix and the noodles.
    3. Chefs Notes: Use low fat cheeses.
